Difference in Piano sound through interface

I have a MIDI keyboard out in my garage collecting dust. Maybe I'll drag it out in these sitting at home doing nothing times.

I do know how to play piano a little bit. I can left hand/right hand different things and play basic stuff. But I want to play like Jerry Lee Lewis, and I'll never be able to, so I don't even try.

Yeah, I wanna play like Elton... unlikely. But I'll try for a few years. Basically, if I can get to the point where I'm just enjoying playing away on it I'll probably stick with it.

What I've started trying is learning generic classical pieces and then trying to turn them into rock n roll peices once I've got them under my fingers.

I've managed it with moonlight Sonata.

Got this kind of sorted now.
I have that stereo splitter cable thing.
So I have my piano going into two inputs in my interface.
Have two tracks armed in Reaper, panned 50/50 and the record monitoring set to ON and an it makes a fairly good approximation of the normal headphone out from the piano.

Just thinking though - could I have just used a stereo cable? Are input jacks on an an interface only mono? Or could they do a stereo signal?

Input jacks on an interface are almost always mono.
